Sear seasoned chicken in olive oil until golden and cooked through; rest, then slice.

Boil pasta to just shy of al dente; reserve 1 cup pasta water.

In the same pan, melt butter and sauté garlic 30 seconds. Add cream and reduce 2 minutes.

Off heat, whisk in cheeses and mascarpone with a splash of pasta water until silky.

Toss in pasta and chicken; loosen with more pasta water as needed.
